Material selection: Choose fresh pineapples with a maturity of 70%-80%. The fruit should be full, free of pests and diseases, and free of rot and deterioration. This is the basis for ensuring the quality of pineapple preserves.
Cleaning and grading: Use clean water to rinse off the mud, microorganisms and other impurities on the surface of the pineapple, and then grade them according to the size and weight of the fruit to facilitate unified operation and management of the subsequent processing process.
Peeling and core removal: Use professional peeling and core removal equipment, such as mechanical peeling machines and corers, to remove the outer skin and internal hard core of the pineapple. During the operation, adjust the parameters of the equipment according to the size of the pineapple to ensure the effect of peeling and core removal, while minimizing the loss of pulp.
Trimming and slicing: Use a pineapple peeling machine to trim the pineapple, remove the residual skin, spots and mechanical damage on the surface, and then cut the pineapple into round or fan-shaped slices of a certain thickness as needed.
Color protection and hardening: Soak the cut pineapple slices in a color protection and hardening liquid. This process can prevent the pineapple slices from browning during subsequent processing, and make the flesh harder, which is conducive to maintaining the shape of the preserved fruit.
Sugaring: Mix the blanched pineapple slices with white sugar in a certain proportion while they are hot, and put them into the sugar jar with a layer of fruit and sugar for pickling.
Drying: Take out the sugared pineapple slices and drain the sugar liquid, evenly spread them on the drying screen, and send them to a hot air circulation dryer or a vacuum dryer for drying.
Packaging: After the dried pineapple preserved fruit cools to room temperature, it is weighed and packaged according to a certain weight. Usually, vacuum packaging or nitrogen-filled packaging is used to extend the shelf life of the product and prevent the preserved fruit from getting damp and deteriorating during storage and transportation.
