Yam Drying Process

2022-12-15

It is necessary to peel and slice the yam in the drying process, and attention should be paid to the control of temperature and humidity in the drying process.

Yam drying process

After peeling the yam, cut it into yam tablets of uniform thickness and uniform size. After water treatment, drain the water and put it on the stainless steel material frame. Pay attention not to pile up, and leave a certain gap between the slices. Start the heat pump dryer and set the drying temperature to 50℃ for 0.5-1.5 hours in the first parameter.

After the previous heating, the dryer also began a small amount of moisture discharge work, and then when the temperature parameter is set in the range of 40℃-50℃, the yams in the drying room are in a state of low temperature and high humidity, the surface of the yam began to form water vapor, condensation into water discharged out of the drying room. At this stage, the drying time is 3 hours.

On the basis of the above, the temperature continues to rise by 10℃, and the temperature parameter is set in the range of 50℃-60℃. As the temperature continues to rise, the yam tablet is in the state of medium temperature and medium humidity. At this time, the continuous temperature and circulating wind send the heat evenly to every corner of the oven, and the yam tablet continuously evaporates water vapor and is taken away by the humidifying system.

With the increase of temperature and the discharge of water vapor, the humidity of yam tablets is getting lower and lower. When the temperature parameter is finally set at 60℃-70℃, the intensity of moisture discharge increases until the yam tablets are dried to about 10% moisture content, which takes about 6 hours. At this time, the yam tablets have been dried and broken by hand, with uniform drying on the outside and inside.
